This is officially my new favourite (except for the Tortilla pizzas obvs)
For this I literally threw some ingredients together and hoped for the best and it was so tasty! Additionally, if you don’t like spice, it doesn’t need to have any spice in it. Perfect.
- Butternut Squash (spiralised)
- Sweetcorn (40g)
- Red Onion
- Almond Milk (100ml)
- Chilli Cheese (approx. 30g; can use any cheese including Vegan)
- 1 Garlic Clove
- Fry Light (plant based e.g. olive oil)
- Chilli Flakes (optional)
- Cayenne Pepper (optional)
If you want to add meat you can also do this too!
Steam the broccoli either in the microwave or in a pan.
Add the squash, steamed broccoli, red onion, sweetcorn and garlic to a frying pan (sprayed with Frylight). Once this has started to cook, add the spices and continue to stir.
In a separate pan add the almond milk and cheese and stir until the cheese has melted. Then add this to the frying pan and let simmer until the sauce becomes thicker.
